Sodium hexametaphosphate is an inorganic salt compound with the chemical formula (NaPO3) 6 and a relative molecular weight of 611.17. Sodium hexametaphosphate appears as a glassy amorphous solid, appearing as colorless or white flakes, fibers or powders, with a relative density of 2.484 (20 ℃) and a melting point of 616 ℃ (decomposition). It is soluble in water and insoluble in organic solvents such as acetic acid or ether. Sodium hexametaphosphate has strong dispersibility, emulsifying properties, and high viscosity. The aqueous solution is alkaline and can form complexes with metal ions. Easily hydrolyzed into orthophosphate in warm water, acid or alkaline solutions.
Application areas:
1. Mainly used in the food and industrial industries. The main applications in the food industry are:
(1) Sodium hexametaphosphate is used in meat products, fish sausages, ham, etc. It can improve water holding capacity, increase cohesiveness, and prevent fat oxidation;
(2) Used for soybean paste and soy sauce to prevent discoloration, increase viscosity, shorten fermentation period, and regulate taste;
(3) Used for fruit drinks and refreshing drinks, it can increase juice yield, increase viscosity, and inhibit the decomposition of vitamin C;
(4) Used for ice cream, it can improve expansion ability, increase volume, enhance emulsification, prevent paste damage, and improve taste and color;
(5) For dairy products and beverages to prevent gel precipitation;
(6) Adding it to beer can clarify the liquid and prevent turbidity;
(7) Used for canned beans, fruits and vegetables, it can stabilize natural pigments and protect food color;
(8) Spraying sodium hexametaphosphate aqueous solution on cured meat can improve its anti-corrosion performance.
